Apple & Blueberry Cake recipe
A delicious vegan apple & blueberry cake from Instagrammer and food blogger thetastybitee.
Ingredients
| 3/4 cup | caster sugar |
| 1/3 cup | sunflower oil |
| 1/4 cup | apple sauce |
| 3 tbsp | plant based milk |
| 1 tbsp | chia or flax seeds |
| 3 tbsp | warm water |
| 1 cup | plain flour |
| 1 tsp | apple pie spice mix |
| 3 | eating apples |
| 150-200g | blueberries |
Method
- Mix together the sugar, sunflower oil, apple sauce and plant based milk.
- In a separate bowl mix together the chia or flax seeds with the warm water and then add to the cake mix along with the plain flour.
- Peel, core and cut 2-3 apples into large chunks and sprinkle the apple pie spice mix. Stir into the cake mix with 150g of the blueberries.
- Pour into a greased and lined loaf tin and scatter on the last 50g of blueberries.
- Bake at in a preheated oven at 180C for 40 minutes until cooked all the way through.
