| 1.35kg | red snapper, or other snapper |
| 1tsp | natural sea salt, or to taste |
| 2tbsp | fresh lime juice |
| 65ml plus 3tbsp | extra virgin olive oil |
| 250g | thinly sliced white onion |
| 2 | large garlic cloves, sliced |
| 900g | tomatoes, finely chopped |
| 2 | bay leaves (ideally Mexican bay) |
| ¼tsp | organic oregano (ideally Mexican oregano) |
| 12 | pitted green olives, cut into halves |
| 2tbsp | capers |
| 2 | jalapeňo chiles |
| ½tsp | Steenbergs Organic natural sea salt, or to taste |
