1kg | fresh mussels , cleaned and de-bearded (Discard any mussels that don't close after being washed and cleaned!!) |

1 | red onion finely chopped |
1 | white onion finely chopped |
1 | fresh red chilli finely chopped |
2 tsp | Steenbergs Organic Chermoula |
100 ml | fish stock or white wine |
50g | butter |
1 | Bunch of coriander, roughly chopped. |
