Cherry Hazelnut Chai Cookie Recipe
Who doesn't love a chewy cookie freshly baked, these cherry hazelnut cookies add a nutty and fruity twist.
Ingredients
| 3 cups/375g | Plain Flour |
| 1 tsp | bicarbonate of soda |
| 1/2 tsp | baking powder |
| 1 tbsp | ground cardamom |
| 3 | cardamom pods, crushed |
| 1/2 tsp | ground organic star anise |
| 1 tsp | salt |
| 1 cup/225g | butter, soft |
| 1 cup/200g | golden caster sugar |
| 1 cup/170g | dark brown soft sugar |
| 2 | eggs |
| 1 tsp | Steenbergs organic vanilla extract |
| 1/2 cup/75g | chopped, roasted hazelnuts |
| 1/2 cup/65g | roasted whole hazelnut |
| 1/2 cup/80g | dried sour cherries |
| 1 tsp | Steenbergs Organic Chai mix |
| 1 1/2 tablespoons | Caster sugar |
Method
- Preheat oven 190C, line 2 large baking sheets with non-stick baking paper.
- Mix dry ingredients in a bowl (not the sugar) and whisk to combine.
- Cream the butter and both sugars until creamy and combined.
- Beat in the eggs until fluffy, add the vanilla and beat again.
- Mix in the dry ingredients until combined.
- Stir in the hazelnuts and cherries
- Form into 12 large balls and sit 6 onto each baking sheet well-spaced apart.
- Sprinkle with the chai spice mix, mixed with the 1.5 tablespoons of sugar and bake for 8-10 minutes until JUST coloured.
- Do not overbake, the cookies will be soft but they will firm up on cooling. The centres will remain beautifully gooey.
- Cool then transfer to a wire rack to cool completely.
