Ingredients
| 125g | unsalted butter, softened |
| 150g | light brown sugar |
| 1 | egg |
| 2 tsp | Steenbergs orange extract |
| 1 tsp | ground cinnamon |
| 1/2 tsp | mixed spice |
| 150g | wholemeal spelt flour |
| 75g | rolled oats |
| 1 | bar of 85% Divine Dark Chocolate, broken into small chunks |
Method
- Preheat the oven to 180C
- In a stand mixer, blend the butter and sugar until soft and fluffy
- Crack in the egg and combine.
- Combine the oats, flour, cinnamon and mixed spice in a bowl then add to the butter mixture; combine well.
- Add the orange extract and dark chocolate chunks and stir to combine.
- Using a dessert spoon to help you, roll out 18-20 balls of dough and space out on 2 lined baking trays.
- Slightly flatten the balls, place the trays in the oven and bake for 12-15 minutes until slightly golden.
- Leave to cool slightly on the tray (so that the chocolate isn't still molten!) before transferring to a wire rack to cool completely.
- Delicious with an uplifting cup of afternoon tea.
