Ingredients
| 1 tablespoon | oil |
| 2 | cloves garlic minced |
| 1 | large onion sliced |
| 2 | large peeled and chopped carrots |
| 2 | pints organic vegetable stock |
| 1 cup | organic orange lentils |
| 1/2 teaspoon | organic cumin |
| 1/2 teaspoon | organic turmeric |
| 1 teaspoon | steenbergs organic perfect salt |
| 1 tablespoon | fresh lemon juice |
| 1/2 teaspoon | organic Harissa with rose |
| Toasted flaked almonds and good olive oil to serve on top |
Method
- Fry the onions and carrots in the oil
- Add the organic red lentils garlic, organic cumin, organic turmeric, organic perfect salt, lemon juice, organic Harissa to the pan
- Pour in the stock and cook on a medium heat for one hour adding extra water if needed
- When the lentils have cooked (soft yet not mushy) your soup is ready
- Blend in a food processer or leave chunky
- Sprinkle the almonds and drizzle the olive oil over the top of soup dishes
- Serve with warm fresh pitta or naan bread
