If you grown courgettes, you often end up with a glut, this Courgette, Rocket and Lemon Soup recipe freezes well and is a fresh soup, that can easily be vegan, without frying in butter.
Courgette, rocket and lemon soup Recipe
Courgettes make a great soup but they don't have a powerful enough taste on their own, rocket and lemon adds that zestiness and peppery sharp taste which makes all the flavours work well together producing a very tasty soup
Ingredients
| 3 | large courgettes |
| 1 tablespoon | olive oil or 20g butter |
| 70g | Rocket washed |
| 1 | medium white onion peeled and sliced |
| 1 pint hot water/ 2 teaspoons | Steenbergs organic bouillon |
| 1 | fine zested lemon |
| Steenbergs perfect salt to taste |
Method
- Fry the courgettes and onion with the oil or butter for 10 minutes till soft but not browned
- Add the grated lemon zest
- Add the water and veg bouillon
- Add the perfect salt
- Cook on a medium heat for about 30 minutes till everything is very soft
- Using a blender smooth the soup till there are no lumps left
- Taste and adjust the seasoning to your taste
- Serve just as it is or with crusty bread or maybe a savoury scone
