One Pot Three Ways - Review of Rachel Ama's new cookbook

We're really excited to have teamed up with Rachel Ama to celebrate the launch of her new book, One Pot: Three Ways. It's an attractive, colourful cookbook filled with wholesome, easy-to-follow vegan recipes that will revolutionise your meal planning.
The main aim of the book is to make a lovely one pot/one pan/one tray dish that can then be used over the next three days in different ways, in order to create meal variety but also to reduce the time taken to prepare and cook the dishes. Many of Rachel's dishes have a Caribbean slant, but you'll also find African, Italian, American, Cuban and Asian styles, as well as some delicious sweet treats.
We're delighted to be able to share the Cajun Beer-Battered Oyster Mushrooms recipe with you on our recipe pages. The recipe uses lots of lovely aromatic spices to make a flavoursome batter in which to coat and then fry the oyster mushrooms. These are then served first with Tartare Sauce and Garlicky Crushed New Potatoes, followed by an American style 'Chicken' Pickle Sandwich and then finally Cajun Tacos with Pickled Red Onion and Tartare Sauce. All equally delicious recipes in their own right but fabulous inspiration if you have a tight schedule and want to know that you are eating a delicious wholesome plant-based meal each day.
The book contains a wide gamut of dishes, from stews and pies to pasta sauces and sushi, and all with the same big, bold flavours. We love the fact that there are plenty of spice blends and seasonings to make, including some really interesting ones such as 'suya' - a West African spice rub made from ground peanuts and roasted spices. There are also some delicious, sweet recipes including Rachel’s fail-safe vegan loaf cake recipe made into three different cakes – Lime & Ginger, Orange and Marble Banana Bread.
Rachel started eating a vegan diet 6 years ago and have never looked back. Her bold use of flavours, inspired by her Caribbean/Sierra Leonian heritage, means that she has created delicious, flavoursome dishes and with the help of the one-pot dish concept she hopes to inspire you to do the same.
