This week is National Vegetarian Week from 14th - 20th May, and we thought it would be a good idea to pick out some of our favourite recipes from the diverse Steenbergs recipe collection, which can be found in its full glory here.
National Vegetarian Week is a good excuse to go veggie for a few days and comes at the perfect time of year, with the harvest of sweet Jersey Royals, tender asparagus and the start of the British Strawberry season.
We have been very lucky to work with some fabulous chefs and food writers over the years, who have shared their recipes with us and inspired us to be more and more adventurous with spices in the kitchen. Here are a few of our favourites:
1. Harissa with Rose Spiced Sweet Potato Fritters from food blogger Niki
These fritters created by Niki from www.nikibakes.co.uk are delicately flavoured with Steenbergs Organic harissa with rose and are quite easy to make. They are perfect for picnics or a light brunch served with a couple of poached eggs and a light garden salad.
2. Buttered Jerusalem Artichoke and Kale Cups- The Devilled Egg
A delicious recipe using the sometimes unloved but also highly prized jerusalem artichokes from The Devilled Egg online cookery school.
3. Baked Onion Bhajis - Meera Sodha
"These are a step forward from the deep-fried favourites: they are healthier, more pleasant to cook, and just as tasty. I like to serve these with a fresh coriander or mango chutney, or beetroot raita," says Meera.
4. Bombay Potatoes- Sharmini Thomas
Originally from Kerala, Southern India, but now based in York, Sharmini runs her own cookery courses - Sharmini's Inspirational India Cuisine, is a cookery tutor for the City of York, and a presenter and judge for York Food & Drink Festival.
5. Turmeric Spiced Burgers - Jo Hodson from Including Cake
These burgers are an anti-inflammatory powerhouse! Jo used almond flour as the key ingredient to bind them which is in itself a potent anti-inflammatory, so along with onion and garlic these little burgers really should help kick sore muscles into touch. Jo added a little garam masala and salt to boost the flavour, but you really want to focus on the turmeric as much as possible. Serve on a bed of spinach for even more anti-inflammatory fighting properties (and a break from all that yellow!)
6. Carrot & Coriander Crackers - Henrietta Inman's The Natural Baker
"Crunchy and with a subtle aroma of sweet spice from the anise, coriander and mustard seeds, these are such easy crackers and so versatile," says Henrietta. We find them delicious with a slice of cheese!
7. Roasted Vegetable Shawarma with Habanero Sauce- Steenbergs
A firm favourite from the Steenbergs collection with lots of spices, Habanero chilli and chilli salt. Not for the faint-hearted!
