- Prepare the batter in a food processor, cover and set aside. If making the alternative batter, combine flours, baking powder, salt and oil in bowl, stirring in enough water to form a smooth paste; fold in beaten egg white.
- Heat oil in wok. Peel bananas and slice into diagonal 3 cm wide slices. Dip into batter and fry for 3 - 4 minutes, turning around constantly. Drain and serve immediately, perhaps with a sprinkling of icing sugar.
