Salads for a sunny day

Following our recent customer survey, several of you asked for more savoury recipes, and in particular for salads with tasty dressings. 

So here is a selection of colourful, vibrant, flavoursome salads which can be eaten by themselves or as part of a summer spread.

Courgette and ricotta salad – a lovely fresh salad flavoured with mint and lemon, this salad is enhanced by the fennel seeds, lemon peel, garlic and herbs in the Turkey Seasoning. Feel free to use goat’s cheese, feta, halloumi or non-dairy cheese, and do try it with your favourite seasoning - Chermoula or Italian Dressing Herb Mix also work well.

Easy Tabbouleh – a delicious classic dish of grains and fresh herbs mixed with tomatoes and cucumber. Try couscous, bulgur wheat or quinoa for gluten free and toss the warm grains in the dressing so that they absorb the maximum flavour. Many thanks to Nikibakes for this recipe. 

Green Bean salad with an orange kefir dressing - This refreshing and beautiful green bean salad has been designed by Gourmet Glow. The subtle sharpness of the kefir is blended with silky olive oil and orange, with a dash of lemon and garlic, to create this beautiful plethora of flavours. Quickly blanching the beans first before refreshing ensures they maintain their colour and bite.

Mexican Bowl with Avocado salsa – A delicious plant-based dish from Millie Gardner’s e-book Hot ‘n’ Spicy. 



Orange, carrot & pine nut salad with orange blossom flower water – full of vitamin C and with a Middle Eastern influence, this light, fresh salad is perfect for a lovely summer’s day.


Tuscan Bean Salad – a traditional Tuscan salad made with roasted vegetable, beans and garlicy toasted bread, this recipe is easy to make and so full of flavour. It’s a great way of using up bread that is couple of days old too – just slice off any stale crusts and pop in the oven with the oil and spices.
