Chilli Beetroot Relish Recipe
Beetroot is one of our favourite vegetables and this is a great recipes for a storecupboard relish.
Ingredients
| 2 | beetroot |
| 1 | carrot |
| 1 tsp | Steenbergs organic cumin seeds |
| 1/2 tsp | Steenbergs organic ground ginger |
| 1/2 tsp | Steenbergs organic ground cinnamon |
| 3/4 tsp | Steenbergs organic ground coriander |
| 1/2 tsp | Steenbergs organic turmeric |
| 1 | smoked garlic clove, crushed |
| 1/2 | red chilli, chopped |
| 1/2 tsp | Steenbergs organic crushed chilli flakes |
| 2 tbsp | Steenbergs organic cinnamon sugar |
| 6 tbsp | organic cider vinegar |
Method
- Peel and grate the beetroot and carrot
- In a frying pan, dry fry the cumin seeds until they 'pop.' Add to the grated veg with the other spices, garlic and chopped chilli. Give everything a good mix
- Warm the sugar and vinegar until the sugar has melted and pour over the veg mixture. Stir and have a taste. This is where I add some chilli flakes, salt and pepper. Taste again but don't forget that the chilli does warm up over time! Add more sugar and cider mix to taste if required
- Store in jam jars or kiln jars. Once opened keep in the fridge. It will keep for1 month - if you can stop eating it! A wonderful gift for a friend to warm any heart and soul.
